Spring is always a hopeful time of year, as the weather warms up, flowers - and grapevines - start to blossom, and people emerge from their winter cocoons. Of course this year brings more hope than ever, as we look forward to returning to the activities and outings we’ve been missing. At Malene we can’t wait to reconnect with our club members and guests. While the past year has been challenging, the loyal support of our Malene community has kept us going. We are so grateful to you for being there when we needed you most. We hope to see all of you soon so that we may say ‘thank you’ in person.

Meet Krista Frederickson, Member Experience Lead
We’re delighted to introduce the newest addition to our wine club team, Krista Frederickson, who has recently moved into the role of Member Experience Lead. Some of you may already know her from the Chamisal tasting room, where she has been a part of our hospitality team for the past two years. Krista looks forward to helping make your Malene experience exceptional. She invites you to reach out to her for help with special requests, reservations, and anything else that she may be able do for you.

Our resident Sommelier William Becker has the ideal pairing for the Rosé wines in your shipment this month: fish tacos! Topped with tomatoes, jalapenos, cilantro, lime and avocado, this is a fresh, flavorful dish that’s simple enough to make any day of the week. Enjoy
Fish Taco Recipe
- 1 tsp olive oil
- 1 small onion, chopped
- 4 garlic cloves, finely minced
- 1 lb fish fillets, patted dry and seasoned with salt and pepper
- 2 jalapeño peppers, chopped (seeds removed for less heat)
- 2 cups diced tomatoes
- 1/4 cup fresh cilantro, chopped, plus more to garnish
- 3 tablespoons lime juice
- kosher salt and pepper to taste
- 8 white corn tortillas
- 1 cup sliced cabbage
- 4 ounces 1 medium avocado, sliced
- 8 lime wedges
In a large skillet over medium heat, add olive oil and sauté onion until translucent, 4-5 minutes. Add garlic and cook for 1 minute more. Bring the pan back up to medium high heat and add more oil if needed. Add fish fillet and cook until the flesh starts to flake. Turn the fish over and add jalapeno peppers and tomatoes to the pan. Sauté for an additional five minutes, breaking up the fish so everything is mixed well. Remove from heat, add cilantro, lime, mix well, and season with salt and pepper to taste.
Meanwhile, in a skillet or directly over a burner, heat the tortillas for about 2 minutes on each side.
To serve, top each tortilla with the fish and vegetable mixture and garnish with cabbage, avocado, cilantro, and a squeeze of lime.
Rosé of Old Vine Grenache 2020
On the nose, the wine features notes of tangerine, cotton candy, and cantaloupe. The wine has a lovely softness on the palate and some very subtle oak influence complemented by the wine’s linear and focused acidity. With its elegant structure, this wine will age gracefully for 3-5 years. Enjoy with fresh oysters, dover sole, or a triple-cream brie.
Camp 4 Mourvèdre Rosé 2020
Intensely aromatic and expressive on the nose, this vintage feature notes of peach, Bing cherry, melon, and lilac. On the palate, the wine strikes an elegant balance between juicy fruit and savory notes with a soft and rounded mouthfeel, zesty acidity, and lengthy finish. Drink now or age for up to two years. Pair with grilled vegetables, salmon, or a hard aged cheese.
This wine is a very pale rose-gold color with brilliant clarity. The wine opens with classic aromas of watermelon rind and wild strawberry, and the first sip holds hints of exotic tropical fruits. The Mourvèdre imparts a flinty minerality that adds complexity and elegance. The palate strikes a fine line between opulence and elegance and the watermelon aromas on the nose persists through to the palate, balanced by notes of stone fruit, wild herbs, salinity, and bright, crisp acidity.
