William Becker, our resident sommelier and tasting lead extraordinaire, recommends this refreshing Halibut Watermelon Ceviche recipe to pair with our Grenache Blanc. It’s an ideal pairing this summer and will be a hit at your next dinner party.
Halibut Watermelon Ceviche Recipe
- 8 ounces sashimi grade halibut, sliced thin and then cubed
- 1 cup cubed seedless watermelon
- 1 Persian (or small) cucumber, diced
- ½ cup diced red onion
- 1 jalapeño, sliced thin
- 1 cup jicama, diced
- 2 oranges or grapefruit, peeled and cut into bite size pieces
- ¼ cup coarsely chopped cilantro leaves
- ¼ cup pomegranate arils
- Juice of 6-8 limes plus lime wedges for serving
- 1 ½ teaspoons Diamond Kosher salt
Combine all ingredients and let rest, covered in the refrigerator, for 30-45 minutes until halibut has cured in the salt and lime but all other ingredients are still fresh and perky. Taste and add additional salt and/or lime juice to your liking.
Serve with tortilla chips or scoop the ceviche onto crisp tortillas for delicious tostadas! Serve with additional lime wedges.

New Release Tasting Notes
2020 Grenache Blanc
A first for the team at Malene, we are thrilled to release our first vintage of Grenache Blanc, a varietal that traces its roots to the South of France where it is often bottled on its own and also used as a blending grape in traditional Rhone red wines. Our Grenache Blanc opens with notes of orange blossom, honeysuckle, grapefruit, and beeswax that carry through to the palate. Full and generous, the wine has a unique textural component that we find endlessly intriguing. With fresh acidity and a lengthy finish, the wine lingers on the palate and invites another sip. Pair with a semi-hard sheep’s milk cheese such as Manchego or a traditional bouillabaisse with fresh seafood.
2019 Grenache Noir
Our 2019 Grenache Noir is effusive and expressive on the nose with notes of ripe blackberry, raspberry, white pepper, yoghurt, and graham cracker crust. Bright and juicy on the palate with fine-grained tannins that frame the vibrant fruit notes that carry through to the palate along with some fresh and floral notes of tea rose . A joyful bottling of Grenache, emphasizing the varietal balance of floral, fruit, and spice notes that can be found in fruit grown in cooler climates like the vineyards we source along California’s Central Coast. Pair with aged cheddar, roast beets or duck breast.
